Preheat the oven to 170°C Circotherm.
Place the potatoes in a pan of salted cold water and bring to the boil. Simmer for 12-14 minutes, until the potatoes are tender.
While the potatoes are simmering, place the duck fat, lard or oil in a roasting pan and put into the preheated oven.
Drain the potatoes in a colander and give them a good shake to rough up the edges.
Toss the cooked potatoes in the melted duck fat, lard or oil, and put into the oven to cook for 20 minutes, turning the potatoes once every ten minutes.
Change the oven setting to 200°C CircoRoast with low added steam and cook for 20-25 minutes (increasing the temperature will help the potatoes to crisp up). Turn the potatoes every ten minutes.
Season with salt and black pepper.
Serve immediately to enjoy at their crispy best.
