- 320g pack ready rolled puff pastry
- 1 egg, lightly whisked
- 1 tbsp rapeseed oil
- 2 tbsp unsalted butter
- 200g button chestnut mushrooms, sliced
- 2 cloves garlic, peeled and minced
- ½ tsp salt
- ½ tsp pepper
- 100g garlic and herb soft cheese
- Small bunch chives, roughly chopped

Step 1
Preheat the oven to CircoTherm 190C and line a baking tray with baking parchment or a silicone mat.
Step 2
Unroll the pastry and brush with the whisked egg, then slice the pastry in half width-ways and place one piece on top of the other, so you have two layers of pastry.
Step 3
Cut the pastry into 20 small squares (4 squares by 5 squares).

Place the squares on the prepared tray place in the oven. Bake for 12-14 minutes until golden. Then take out of the oven.
Step 5
Meanwhile, heat the oil and butter in a frying pan over a medium-high heat until the butter starts to foam. Place the mushrooms in the pan and fry for 5-6 minutes until the mushrooms start to brown.
Step 6
Add the garlic, salt and pepper to the pan and cook for a further 2 minutes, then turn off the heat.
Step 7
Place the pastry bites on a serving plate and spoon ½ tsp of the soft cheese top of each. Carefully arrange the mushrooms on top of the cheese, then sprinkle with chives before serving.
